Nothing about the suite talks to a remote server, and none of it needs an internet connection to work.
Nitpick: I’m pretty sure my Windows copy of LibreOffice has an update checker that talks to a remote server. On Bazzite the flatpak gets auto-updated, so if flatpak LO has its own update checker I’ve never seen it.
