Without a doubt, #DeltaChat: open source, free, and privacy-friendly.
Matrix is a good option, but it’s too complicated for ordinary people who aren’t tech-savvy, while Signal relies on Amazon and Google’s servers…

I love my #DeltaChat , and yes, DeltaChat has groups and channels that exist only on the phones of their members. The only drawback might be that, since the channels and groups are only on the phones (and not on a server), new members can’t see posts made previously, and everything that was posted before is blank for them.
